my go-to winter juice

I love when restaurants have one of those big orange juicers. Those elaborate contraptions with the oranges piled on top, waiting to be divided, and juiced. I’ve been using my Breville juicer more often this month and it’s made me feel like a wellness queen to make a big batch and keep it in my fridge for the week. This is the ultimate winter juice, combining citrus with carrots, beets, and ginger. It’s potent stuff, so you could water it down. I like it at full strength over ice.

Yields about 2 quarts

Ingredients:

2 oranges

1 lemon

4 carrots

2 beets

1 knob ginger

To make:

Scrub all root vegetables well—no need to peel them. Remove the skin from the citrus. Juice all ingredients and stir well.
